With Thanksgiving just around the corner, team exaqueo is reflecting on all the things we have to be thankful for, including our families, friends, clients and each other. And, we want to help you get ready for turkey day by sharing some of our favorite recipes.
Susan’s Sweet Potato Casserole
Fun fact: Susan won The Ritz-Carlton Thanksgiving Potluck recipe contest with this!
3 c. peeled, boiled sweet potatoes (5-6)
2 eggs, beaten
1 c. sugar
1/2 tsp. salt
1-1/2 stick of margarine or butter
1 tbsp. vanilla
1/2 c. milk
1 c. brown sugar
1 c. chopped nuts
1/2 c. flour
- Boil potatoes until they crumble with a fork. Drain.
- Cream sugar, 1/2 stick of softened margarine or butter and eggs.
- Add salt, potatoes, milk and vanilla. Beat until mixed and pour into baking dish.
- Dice the remaining stick of butter or margarine and mix lightly with the flour so butter stays in small cubes. Add the brown sugar and nuts. Sprinkle entire mixture on top of sweet potatoes.
- Bake at 325 degrees for 30 minutes.
Lexi’s Favorite Green Bean Casserole
1 can cream of mushroom soup
1/2 c. milk
1 tsp. soy sauce
Dash black pepper
4 c. cooked cut green beans
1-1/3 c. french fried onions
- Preheat oven to 350°F. Cook cut green beans.
- Stir the soup, milk, soy sauce, black pepper, beans and 2/3 cup onions in a 1 1/2-quart casserole.
- Bake for 25 minutes or until the bean mixture is hot and bubbling.
- Stir the bean mixture. Sprinkle with the remaining onions.
- Put back in the oven and bake for 5 minutes or until the onions are golden brown.
Kathleen’s Perfect Cranberry Sauce
12 oz. bag of fresh or frozen cranberries
1 c. sugar
1 strip orange or lemon zest
2 tbsp. water
- Empty cranberries into a saucepan and transfer 1/2 cup to a small bowl.
- Add sugar, orange or lemon zest, and tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes.
- Increase the heat to medium and cook until the cranberries burst, about 12 minutes.
- Reduce the heat to low and stir in the reserved cranberries.
- Add sugar, salt and pepper to taste and cool to room temperature before serving.
Shannon’s Easy Fried Cabbage and Bacon
Everything's better with bacon -- especially cabbage!
1 head of cabbage cut into strips
1 pound sliced bacon
1 medium onion, sliced thin
1/4 c. sugar
1 tbsp. salt
1 tsp. fresh ground black pepper
- In large skillet, cook bacon until crisp; set aside on paper towels to drain.
- Add cabbage and onion to the bacon pan (with drippings still inside). Cook approx. 3-4 minutes.
- Add the sugar, salt and pepper; cook until the cabbage and onions are tender, approx. 10-15 minutes. Crumble bacon and add it to pan. Stir. Serve hot.
